1 cup of shredded Gruyere cheese (or whatever you like)
8 slices of thinly sliced deli ham
4 sunny side up eggs slightly undercooked
4 tablespoons of sauce (ranch dressing, mayonnaise, bechamel etc)
Instructions
LIGHTLY toast bread on cookie sheet under low
broiler for 1 minute or less, at this stage you just
want it to feel stale
On each bread slice spread 1/2 tablespoon sauce,
place ham, shredded cheese (pile irregular for highs
and lows to give texture) another 1/2 tablespoon
sauce and underdone egg
Broil on low for two minutes until egg is set and
cheese melted
A croque madame is served with the egg. If you
prefer a croque monsieur leave the egg off.
Bechamel(make my cheese sauce with no cheese) and
Gruyere are traditional. I like ranch dressing and
monterey jack.
