1 cup (250 mL) grated queso blanco or other fresh white cheese
Instructions
In large mixing bowl, mix arepa flour, 2 cups (500 mL) water and salt with wooden spoon. Let stand 5 minutes to soften. Knead dough about 1 minute until it starts to take on a sheen, working in mozzarella as you go and adding a little more water if mixture is too dry. Form into 6 patties, each about 4-inches (10-cm) wide and 1/2-inch (1-cm) thick.
Heat large, non-stick pan over medium. Add 1-1/2 tsp (7 mL) margarine, butter or oil per arepa. Cook until bottom is browned, about 6 minutes. Flip; baste tops with margarine, butter or oil from pan. Cook until browned and lightly crispy, about 6 minutes. Serve arepas immediately topped with queso blanco so it starts to melt.
