Marinate chicken breast in 1 tbsp. each of lemon and lime juice for 15 to 20 minutes.
Heat 1 tsp. of extra virgin olive oil in a medium sauté pan over medium-high heat, then add chicken along with the remaining lemon and lime juice. Add rosemary and thyme, then season with salt and pepper to taste.
Cook chicken about 8 minutes on each side until golden brown.
Pair with two cups of fresh spinach sautéed with 2 tsp. of olive oil and ½ tsp of minced garlic. Serve over a cup of cooked fettuccine.
