Bring water, butter and salt to boil in saucepan; Whisk in grits; Reduce
heat to medium; Cook until mixture thickens slightly, stirring
often (about 8 min

Remove from heat and add both cheeses, stir until melted; Season with
salt and pepper

Whisk milk and eggs in small bowl; Gradually whisk into grits mixture
|
|
|
Pour mixture into buttered dish, bake at 350 degrees until grits are
firm in center (about an hour); Let stand 10 min.
