1/2 lb italian sausage links cooked and chopped in 1/2 in pcs
1 med onion, chopped
2 19oz cans white kidney beans (cannellini) rinsed and drained
3/4 c chicken broth
1/4 c white wine or chk broth
2 tbs thyme fresh or 1 tbs dried
2 cups escrole or spinich
1/2 c parmesan cheese
Instructions
In a pan cook onion and sausage over med heat for 3 min. drain fat add beans 3/4 c chk broth, wine and thyme. bring to a boil, reduce and cover and simmer 5 min. stir in spinich until hot and garnish with parm cheese.
