dry fry the nuts until slightly brown. Then rough ground in a blender. Put in a pot and
add water (about an inch of water above th nuts). add serai. Bring to boil and simmer
for at least 1 hour until you see oil floats.
Blend the chillies, onions, garlic and ginger. Fry the paste in a pan until dark.
Check that the boiling nuts is thick (may use a hand blender), then add the fried chilly
until desired colour and heat. Add salt and sugar.
