     Maple-Almond Granola

Ingredients
1/4 cup canola oil
1/2 cup grade B maple syrup (not ordinary pancake syrup or corn syrup)
1/4 cup honey
1/4 tsp. salt
4 cups rolled oats
1 cup coarsely chopped almonds
dried fruit (optional, but I always add about 1/4 cup raisins)
 

Instructions
Preheat oven to 325 degrees. Lightly oil a 12 x 15 inch baking pan with cooking spray.
In a large bowl, whisk together canola oil, syrup, honey, and salt. Stir in oats, almonds, and dried fruit. Evenly spread the mixture onto a baking pan, and bake for 30 minutes, stirring every 10 minutes to help bake evenly. Place pan on a wire cooling rack and let cool completely.
(This has become a staple in our house. It's healthy, easy to make, and smells so good when it's baking!) Store in an air-tight container, and it will keep for 2 weeks.
Serving Suggestions
I eat this granola almost every morning for breakfast with yogurt and fresh fruit.
