4 oz (115 g) boneless, skinless chicken breast, cut into thin strips
3 Tbsp lemon juice
1 1/2 Tbsp soy sauce
1 tsp honey
6 oz (175 g) assorted salad greens
1 red onion, thinly sliced
1 large carrot, peeled and grated
1 chicory head (optional)
1 bunch radishes, washed, trimmed and sliced
1 Tbsp sesame seeds
3 Tbsp lowfat plain yogurt
Instructions
Thread chicken onto 8 presoaked wooden skewers
Mix 2 Tbsp lemon juice, 1 Tbsp soy sauce, and honey together in small bowl. Brush mixture over chicken and let marinate for 15 minutes.
Preheat broiler to high and line rack with foil. Arrange salad greens on large platter and top with carrot, onions and radishes.
Cook the kebabs under the broiler for 8 to 10 minutes, or until the chicken is done. Remove and sprinkle with sesame seeds.
Mix yogurt, remaining lemon juice and soy in small bowl and drizzle over salad. Each portion size is 2 kebabs.
