Melt butter in skillet. Add celery, onions and garlic and saute` until tender. Add mushrooms, broth, browned sausage, parsley and seasonings.
Cook 30 minutes longer. (For better flavor, refrigerate this mixture for a day or two before adding bread and eggs.)
Toss celery mixture, eggs and bread cubes until well combined. Spoon lightly into a slow cooker and set on high for 1 hour, then reduce to low and cook an additional 1 - 2 hours.
