Mix in a bowl, flour and cornmeal. In another bowl, mix the milk and egg with a whisk. Put the fish in the milk and egg mix.
Heat fry pan to 325, and add plenty of crisco, so the fish are 'swimming in it' Remove fish, one piece at a time from the milk mix, and dip in the flour mixture. Add to pan and fry until golden brown on the bottom, sprinkle with cajun seasoning, or season salt, turn and fry til done.
Add velveeta cheese to each piece, before it is completely done. Remove from pan and serve with buttered bread!! Preferably home-made!
