preheat over to 200 degrees C or gas 6.put aubergines on a roasting tin and cook for 8-10 mins turning until soft. cut in half and scoop out the flesh, reserving the shells.
heat the oil in a frying pan, add the shallots, garlic and chillies and fry for 2-3 mins. add the courgettes, aubergine flesh, coconut, herbs and soy sauce and simmer, stirring frequently for 2-3 mins.
divide the mix between the aubergine shells and return to oven for 5-10 mins until heated through and serve at once. accompany with rice and sweet chilli sauce.
