1 package Frozen Chopped Spinach thawed and drained
1 cup Grated Romano Parmesan Cheese halfed
1/4 Italian Style Bread Crumbs
28oz can Diced Tomatoes W/ Basil, Garlic, and Oregano including the juice
Italian Seasoning
Salt
Pepper
Instructions
Prepare Shells according to package directions. Drain and rinse with cold water.
Spray a large skillet with Non-Stick Olive Oil and cook onions till translucent. After removing casings from Sausage links crumble and add to the onions, cook through. Add Garlic and seasonings to taste, cook till aromatic, about 30 seconds.
In large mixing bowl combine Egg, Ricotta, Spinach, 1/2c Grated Cheese, Bread Crumbs & season to taste. Once they are mixed well add in the meat mixture and stir well.
Spray 9x13 cooking dish with Non-Stick Olive Oil and spread a little of teh tomatoes in bottom of dish. Fill Shells and place in dish in a single layer. Cover with tin foil and bake at 375 for 30 mins. Remove foil top with remaining 1/2c of Grated Cheese and cook 10 mins more till bubbly.
