Add olive oil to a heavy skillet and heat on medium high. Make sure all chicken breast are the same thickness, use a mallet to thin them if necessary. Brush each chicken breast with the dijon mustard on both sides. Sprinkle both sides of the chicken breast with the bread crumbs. Sear chicken for 3 to 4 minutes on each side until done and crispy.
Place chicken on a plate. Add wine, lemon juice, and capers to the skillet and allow to cook down for 5 minutes or until the sauce thickens. Add salt and pepper to the sauce as needed.
Place chicken breast on a bed of angel hair pasta. Top chicken with tangy caper sauce. Serve with a green salad and garlic bread.
