In a heavy skillet, combine the onions, celery, peppers, and sausage. Cook for 8-10 minutes until the sausage is done and the veggies are tender.
Transfer to a large saucepan. Add V8 juice, salt and pepper, cayenne pepper, and tomatoes. Bring to a boi. Reduce heat and let simmer covered for 10 minutes.
Add okra and catfish and let simmer for 15 minutes.
Place the rice into single serving bowls and top each with gumbo.
