Using a vegetable peeler, run the vegetable peeler along the zucchini and/or squash to create ribbons which are the noodles (without actually peeling the vegetable first). Rotate the vegetable after each peel, and stop when you reach the seeds – the seeds in the ribbons would get too mushy.
Put down a layer of chicken broth in a pan – about 1/8th cup per 2 large vegetables
Bring to medium heat, and toss in the vegetables. After about 3-4 minutes, the noodles will start to get soft.
At this point, add your cream cheese or laughing cow cheese wedges. After the wedges are melted, plate the noodles.
