I cut up 1 medium head of cauliflower and steamed it till it was soft. I put it through my potato ricer and added a 1/4 c egg beaters, salt and pepper. Depending on how much cauliflower you end up with depends on how much egg beaters to use. I mix it all up and sprayed a small skillet with pam. I put a small scoop of mix into the pan and fried it on each side (small potato pancake size). While the second side was browning I sprinkled some ff cheese on top, and put them in the oven to stay warm while I could the rest. I got 8 pancakes out of the mix. I think you could also mix the cheese before cooking and you can also use the southwestern style egg beaters (with peppers) for a different flavor.
