Preheat oven to 350. peel zucchini then slice lengthwise core/seed. Cut into bite size pieces. Put slices in sauce pan with 3 T lemon juice. Bring to boil and cover and cook for 5-6 min, until tender. Drain thoroughly. Place slices back into the pan and add the Splenda, cinnamon, nutmeg and 1 tsp of the oatmeal powder. Cook and stir for another 2-3 min.
Pout in an oven safe bowl. Melt 1 Tbls trans fat free margarine and pour over remaining oatmeal. Mix and sprinkle over the apples and bake in over for about 30 min.
