Cut zucchini into small cubes and slice mushrooms. Place them into skillet sprayed with vegetable oil. Add onions and saute all until zucchini begins to soften. Don't overcook.
In a bowl, add lemon juice, herbs, and seasonings. Beat in eggs and then add cottage cheese, swiss (or mozzarella) and vegetable mixture.
Pour into greased 9-inch pie pan. Sprinkle parmesean cheese over the top.
Bake at 350 degrees for 30-35 minutes.
