In a blender or food processor grind up the Oatmeal. Add cottage cheese, extract, and baking powder. Blend until smooth. Add water 1 T at a time until the batter is the correct consistency. (I like mine a little bit thicker, so I used about 2)
Preheat frying pan or griddle and spray with Pam. Cook pancakes for a few minutes before flipping and cooking other side for about 1 minute. The top won't bubble like a traditional pancake but are easy to flip and I had no problem with sticking.
Made 3 big pancakes, or you could make a bunch of silver dollar sized.
