Steam or boil potatoes until par-cooked. When cooled enough to handle. Peel and grate. Lay Fish on a tray and top each fillett with grated potatoe, pressing down to mould over fish. Refrigerate for 10 minutes

Meanwhile, make Red Onion Dressing. Combine sugar and vinegar and 1/2 cup of water in a small saucepan. Heat on low until sugar disolves. Add onion and increase heat, boil for 10 minutes or until syrup. Strain and discard onion.

Heat a flat bbq plate on medium heat and add oil when hot. Cook fish potato side down for 3-5 minute until crisp and golden. Turn fish and cook for 5 minute or until cooked through.

Drizzle dressing over fish and serve
