1 tbsp cumin (roasted and freshly ground if possible)
Instructions
If using canned beans rinse well. Try to find no or low sodium)
Add black beans and corn together with red peppers and fold. (Black beans are easily mashed)
Fold in cilantro, cumin, onion, and lime juice. I like to add a few dashes of hot sauce mine and serve with a few slices of avacado and tomatoe with a corn toritilla for lunch.
