In a small saucepan heat milk until lukewarm, place over yeast in a large bowl. Stir to completely dissolve the yeast. Add butter, sugar, and salt. Stir to dissolve. Add wheat germ, flax seed meal and 1/2 cup of flour. Beat with a wooden spoon until smooth and elastic. Add 1 1/2 cups more of flour to dough using hands. Turn dough onto a lightly floured board. Cover with a clean cloth and let rest for 10 minutes. Knead the dough until smooth, elastic and non sticky. Place dough in clear bowl. Brush surface with melted butter. Cover with a clean tea towel and let rise until double in bulk. About 40 minutes. Turn onto sightly floured surface and knead again for 30 seconds and shape into a loaf. Place in greased loaf pan, cover with the tea towel and let rise until double. Bake in a 400 degree oven for 30-45 minutes or until loaf is golden brown and sounds hollow. Remove from pan and place on rack to cool. Makes 1 loaf.
