1 cup orange rind cut into small peices (takes about 2 oranges)
1/2 t baking soda
4 cups water
1 cup sugar
batter- 1 cup sugar
3 T butter
3 eggs well beaten
1 cup milk
3 1/2 cups flour
3 t baking powder
1/4 t salt
1 cup chopped nuts
Instructions
combine orange rind,soda, water and bring to a boil, cooking until rind is tender. rinse in hot water until clear. drain and add sugar, stir and cool
to make batter,cream sugar and butter until fluffy. add eggs and stir. Then alternating add milk with flour, baking powder and salt, mmixing well. stir in the orange rind and the nuts. use two large bread pans greased and floured (three smaller pans may be used) fill pans 1/2 full.
bake at 350 degrees for 40 to 60 minutes. check for doneness.
