Instructions
Press as much water out of the tofu before cubing by pressing it between multiple layers of paper towel before cubing. Heat 1/2 of oil over medium-high heat and add tofu. Brown on four sides and set aside.
Add peppers and onions to pan and cook until soft, about 5 minutes. Add garlic, ginger, curry powder, and scallions, and cook for 1 minute stirring continuously until aromatic.
Add coconut milk, tofu, vanilla, brown sugar,basil and additional veggies. Simmer 5-10 minutes. Serve over rice or lentils.
