Preheat oven to 300 degrees. Chop almonds into smaller pieces. Mix all the dry ingredients in a large bowl. In small saucepan, combine oil, honey, and orange juice concentrate. Heat over low heat and stir until pretty warm. Pour wet mixture into dry ingredients, mix well. Use clean hands for theis to get each particle covered with liquid. (This is the secret to cruchy granola.) Spread mixture in two large baking pans, toast in oven for 1 hour and 15 minutes. Stir granola well every 10 minutes. Granola is ready when golden brown but not dry. When done turn oven off and leave the granola in the oven overnight so that it will crisp up. Make sure granola is cool before putting in airtight container. Makes about 4 quarts.
