Preheat oven to 250°. Mix together cumin, salt, pepper, and garlic powder. Stir in lime juice and rub all over pork. Make slits in pork and insert garlic cloves into cuts. You can marinate the meat overnight if you want. Place roast in a pan with the onion and bay leaf. Cover and roast 3-4 hours, until 190°. Let rest 20 min. Serve with sauce in bottom of dish.
