Preheat oven to 400 F. Make pastry first to bake
and while baking make your filling and icing.

Pastry - Heat water and butter to boil. Add flour
and stir constantly until mixture is smooth and
forms a ball. Remove from heat and cool. Beat in
4 eggs after cooled one at a time. If you do not
let it cool eggs will cook when added to mixture.
Drop dough from tsp to greased cookie sheet or
pipe dough from bag. bake 30 minutes or until
light brown. Set aside to completely cool.

Filling- Combine milk, sugar, salt and flour. Cook
slowly until thickens. Add 3 beaten eggs and
continue to cook until mix is thick. Remove from
heat cool then add vanilla and mix. Stuff pastry
with filling using a pastry bag and long pastry tip.

Icing- Melt chocolate then add sugar and cream.
Cook over medium heat until soft ball stage. Let
cool and beat until smooth. Ice on eclairs.
