1 lb. dry navy beans
|
|
1 ham bone with meat
|
|
4 c. mashed potatoes, minimum. More makes soup thicker.
|
|
2 med. onions chopped fine
|
|
2 minced garlic cloves
|
|
2 chopped celery stalks
|
|
4 Tbs. fresh parsley, chopped
|
|
1 tsp. salt
|
|
1/4 tsp. pepper
|
|
|

|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Soak beans overnight covered with water. Drain.
In a large soup pot add ham bone & beans. Add 2
qts. water & simmer 1 hr.
|
|
|
Add rest of ingredients and simmer all 1 hr. more
until celery, beans,& onion are very tender.
|
|
|
Remove hambone, shred meat, & add back to soup. Discard bone.
Adjust seasoning.
