Heat the oil in a medium skillet and sauté the garlic.
Add the tofu and sprinkle salt and pepper.
Stir fry for about 3 minutes or until you see the tofu brown just a
bit.
Add the chopped broccoli and keep cooking until it becomes
tender.
In a separate bowl, combine the red quinoa, tofu and broccoli and
mix them together.
Add the almonds or walnuts and enjoy.
