Preheat oven to 375,Wrap potatoes in foil and bake
for 1 to 1 1/2 hours. Meanwhile in bowl, combine,
vinegars, sugar and soy sauce until sugar is
dissolved. Reserve
Heat saute pan over medium heat. Add 2 tbl oil, add
shrimp, saute until shrimp turn pink about 1 min.
transfer to bowl and reserve
add remaining 2 tbl oil to pan . When hot add
garlic and ginger and saute about 2 min. Add soy
sauce mixture, simmer, stirring up browned bits
from bottom of pan until mixture is reduced by
half. Add edaname, tomato and shrimp, simmer until
shrimp are cooked through 2-3 min, whisk
in butter and season with salt and pepper
slice potatoes among 5 dishes, season with salt and
pepper. Top with shrimp and sauce
