Cut the skin off the chorizo sausages. Chop up and brown in a skillet. Drain grease and set chorizo aside.
In same skillet, with grease residue, add butter, flour, milk, and OLE enchilada sauce. Heat it up and whip it until its a smooth sauce. Stir in chorizo and the bag of pepper jack cheese until melted in the mix. Take off heat.
Grab a tortilla, add some of the chorizo mix.. Wrap it up and place it in the pan. Repeat and fill the pan or until your mix is gone.
Pour the green enchilada sauce over the wraps in the pan. Cover the sauce with the finely shredded fiesta cheese.
Cook for 20 minutes at 350 degrees.
