1 lime

1/4 c chopped fresh cilantro
|

1/2 tsp ground cumin
|

2 Tbsp olive oil
|

1 lb shrimp
|
|
1 medium zucchini, cut into chunks
|

1 avacado
|

1/4 c no fat sour cream
|
|
1 jalepeno pepper, diced small (minced)
|

Instructions |

|
Preheat oven to 450. Combine first 4 ingredients,reserving 1 Tbsp of the lime juice, and set aside. Wash and pat dry the shrimp and cut the zucchini.

Peel and chop the avacado. Add remaining ingredients and reserved lime juice. Mash with a fork to form a paste. Set aside.

|
Just before roasting, toss shrimp and zucchini with lime juice mixture, spread into a single layer on a baking sheet.
|
|
|
Roast for 20-25 minutes. Serve immediately with avacado sauce on the side.
