Line a jelly roll pan with waxed paper; greased the paper and set aside. In a large bowl, beat eggs for 3 minutes. Gradually add sugar; beat for 2 minutes or until thick and lemon colored. Stir in applesauce. Combine dry ingredients and fold into applesauce mixture. Spread into prepared pan. Bake at 350 degrees 12-15 minutes. Cool for 5 minutes. Invert onto kitchen towel dusted with powdered sugar. Peel off waxed paper and roll up; starting with short side. Cool completely. Unroll cake; spread ice cream over. Roll up again. Place seam side down on platter and frost with Cool Whip. Cover and freeze 1 hour. Remove from freezer for 10 minutes before serving. Drizzle with caramel topping.
