1. Using a vegetable peeler, peel cucumbers lengthways to form long thin ribbons. Discard excess seeds. Place cucumber ribbons into a bowl. Thinly slice radishes into rounds. Cut into thin strips. Add to cucumber with mint, snow peas and sprouts. Cover. Refrigerate until required.
2. Combine lime juice, oil, and salt and pepper in a jug. Whisk to combine. Add dressing to salad just before serving. Toss until well combined. Serve
