Combine 1 cup coconut milk, chicken, and 1 tbsp. curry paste in skillet. Over medium-high heat, cook chicken 5 minutes. Add frozen broccoli blend; cook 2 minutes. Add 3 tbsp. curry paste and remaining milk. Reduce heat; cook 5 minutes. In saucepot, boil 1 cup each coconut milk and water; add 2 rice. Remove; cover and let sit 5 minutes.
