Combine these ingredients in a saucepan. Stir in 21/2 c milk, gradually. Cook over medium heat, stirring constantly until the mixture thickens & comes to a boil. Boil for 1 minute, stirring. Beat 3 egg yolks. Pour half the chocolate mixture into the egg yolks. Mix well, then add to the remaining chocolate mixture in saucepan. Cook 1 minute still stirring. Remove from heat & add 1 tbsp butter & 2 tsp vanilla. Cool slightly, pour into baked pie shell, cover with meringue.
This is good enough to eat like pudding. Leave out the chocolate, add coconut & make coconut cream pies. Top with meringue & coconut & brown in hot oven.
