Pour yourself a nice merlot or cabernet sauvignon to enjoy while you cook this delicious appetizer.I created this recipe by accident once trying to make a homemade pizza with nothing but some tomatos, italian sandwhich bread and cheese. With a little tweeking, it turned out to make a great variation to the traditional cold Bruschetta!
Place the sliced french bread face up on a baking stone or cookie sheet. In a small bowl mix 1 TBS of garlic with the olive oil and mix well. Spread the garlic infused olive oil on the top of the french bread slices and put under a brioler for about 3 to 5 minutes or until toasted golden.

In the same bowl you used for the garlic oil, add the diced tomatos, crumbled feta and shredded italian blend cheese, italian dressing and 1 tsp of minced garlic. blend well.

Remove the bread from the broiler, and spread the tomato mixture thickly on top it. Sprinkle lightly with some garlic salt and put the loaves back under the broiler for 6 to 8 minutes or just until the cheese starts to melt.

This is good enough to enjoy as a dinner as well! It can also be made with a regular loaf of italian bread if its all you have in your bread box. Get crazy and add some shredded up hard salami or pepperoni to the top right before you put it under the broiler.But I warn you, its addictive!!
