Instructions
Add shallot, garlic, pine nuts, basi, parsley, salt, pepper and cheese to the bowl of a food processor. Pulse the mixture several times to chop coarsely, then blend for 30 seconds. Pour the olive oil into the mixture while it is running. Add lemon juice (or white balsamic vinegar). Pour the dressing into a bottle and keep chilled until ready to use. Shake well before serving.
Drizzle this easy-to-make fresh dressing over your favorite salad mix; fresh greens, roasted vegetables, or a plate of olives and sliced tomatoes.
Makes about 1 cup dressing.
