In a mixing bowl, combine the yeast, warm water and sugar; set the bowl aside for about 5 minutes to allow the yeast to develop. In amixing bowl, whisk together milk, eggs and 8 tablespons melted butter; add the yeast mixture and whisk to combine. Place this mixture in hte bowl of an electric mixer, add salt and 4 cups of flour and mix on medium-low speed until the flour is incorporated. Add 1 cup flour and continue to mix. Scrape the inside surface of the mixing bowl and add hte remaining flour. Increase the speed to medium and mix the dough for 7-8 minutes. Transfer the dough to a large buttered bowl. Cover with a clean cotton towel and let dough rise for 1 hour or until it has doubled in size. Line 2 baking sheets with parchment paper. Lghtly flour a work surface and transfer the dough. Cut the dough in half, dust one piece lightly with flour and roll it into a rectangle measuring 8x16 inches. Butter the surface of the dough with some of the remaining butter.
