2 boxes large shells, cooked, drained and set aside
1 pound turkey
1 onion, chopped
1 bell pepper, chopped
2 cloves garlic, minced
1 can tomato paste
1 can tomato sauce
Garlic powder
Italian seasoning, divided
Greek seasoning to taste
Pepper
2 beaten eggs
1 pound mozzarella cheese (reserve 1/2 cup)
1 8-ounce container cottage cheese
1 8-ounce container ricotta cheese
pinch of salt
Instructions
Saute the ground turkey with the onion, pepper and garlic. In a saucepan, mix and simmer the tomato paste, tomato sauce, and seasonings. In a bowl, mix the eggs and cheeses along with more Italian seasoning and a pinch of salt Add to the meat and stir until melted evenly.
Lightly grease a 13x9 inch baking dish. Fill the pasta shells with spoonfuls of the cheese and meat mixture. Place in the pan. Pour the tomato sauce over the shells, and spread with a spatula. Sprinkle with reserved mozzarella cheese. Bake uncovered at 350 degrees for 30 minutes.
