2-4 lbs bone-in, skin-on Chicken thighs or drumsticks
2-3 T melted Butter
thinly sliced Lemons, for garnish
Instructions
Combine lemon zest, lemon juice, garlic, thyme, rosemary, salt &
pepper in a large zipper-lock plastic bag. Seal bag and shake to
mix ingredients. Place chicken pieces in bag with marinade,
passing out excess air and seal once more. Refrigerate at least 2
hours.
Preheat oven to 425 degrees. Remve the chicken from marinade
bag and transfer to baking dish, skin side up. SAVE leftover
marinade from bag. Brush top of eat piece of chicken with melted
butter.
Bake for 50-55 minutes, until skins are crispy and well-browned.
Halfway through baking, pour saved marinade over chicken pieces
in baking dish. Once fully baked cover loosely with foil and let rest
10 minutes before serving. Transfer to serving platter and garnish
with lemon slices.
