In a small bowl mix together the rum and honey. Brush pineapple generously with the rum mixture.
Preheat The grill to high heat and brush the grate with oil or nonstick cooking spray.
Place the skewers on the grill. Close the cover and cook until the pineapple is light golden, 3 to 4 min. per side. Sprinkle with the coconut before serving.
