Heat oven to 350 degrees. Beat shortening and brown sugar in small mixer bowl on high speed, scraping bowl occasionally, 5 minutes. mix in flour and salt. Press half of the sugar mixture in greased square pan, 8 x 8 x 2 inches. mix water, molasses, and baking soda; pour half over sugar mixture. Sprinkle with half of the remaining sugar mixture. pour remaining molasses mixture over top; sprinkle with remaining sugar mixture. Bake 40 minutes. Serve warm with lemon sauce and cream cheese topping.
Lemon Sauce- Mix 1/2 cup sugar and 2 Tablespoons cornstarch. Stir in 1 cup water gradually. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Remove from heat; stir in 2 Tablespoons margarine or butter, 1 Tablespoon grated lemon peel and 1 Tablespoon lemon juice. Serve warm or cool.
Cream Cheese Topping- Beat 2 packages (3 ounces) of cream cheese, softened, and 2 to 3 Tablespoons milk until smooth and creamy.
