3 cups 1/2-inch cubes of fresh French or Italian bread
2 tablespoons olive oil
Dressing-
2 large garlic cloves, chopped
6 flat anchovies, rinsed, patted dry, and chopped
2 tablespoons fresh lemon juice
2 tablespoons mayonnaise
1/4 teaspoon salt
1/3 cup olive oil (preferably extra-virgin)
2 tablespoons water
Salad
1 head romaine lettuce, trimmed and torn into bite-size pieces
1/3 cup freshly grated Parmesan cheese
Instructions
Croûtons-
Preheat your oven to 350 degrees. In a bowl, toss bread cubes with oil and seasonings. Mix well. Pour into baking sheet. Separate pieces so they do not stick together. Bake for 10-15 minutes. Remove from oven and allow to cool.
Dressing-
In a blender, add garlic, anchovies, lemon juice, mayonnaise, and salt. Blend until smooth. While running, remove small cap from blender top and begin adding a steady stream of oil. Blend until completely combined. Add water and blend once more.
Salad-
In a large bowl, toss romaine with dressing, croûtons, and Parmesan cheese. Add a light sprinkle of pepper. Toss again. Sprinkle top with Parmesan cheese again. Ready to serve!
