Veggies- Peppers / Onions / Whatever you like
1lb boneless chicken thighs or shrimp
2 Cloves - Garlic, minced
1 TBSP - Ginger, minced
1 TBSP - Red Curry Paste
Appx 400ml - Coconut Milk
2 TBSP - Fish Sauce
1-2 TBSP - Brown Sugar
Juice / Zest - 1 Lime
1/2 Cup - Cilantro
Fry your chicken / shrimp, set aside.
Heat pan, put veggies in with garlic, ginger and curry paste. Sautee 5 mins.
Add all remaining ingredients EXCEPT cilantro. Simmer until reduced a bit.
Add cilantro. Season with salt - pepper. Serve with jasmine or basmati rice.
