2 tblspn rice vinager, or white vinager mixed with water
a 1 in fresh piece of ginger, peeled and minced or grated
1 tspn sugar
2 tblspn soy sauce or to taste
Instructions
if store bought cukes peel and cut in 1/2 long way and scoop out seeds with a spoon. slice and put in colander, let drain over a bowl in the sink for 10-20 min. rinse, drain and spin or pat dry. (if you want super crunchy cukes , wring dry in a towel)
toss the cukes with salt, pepper, vinegar, ginger, sugar and soy sauce. taste and adjust seasoning.
Korean style - add 1/2 tspn or more minced hot peppers and 1 tspn minced garlic. garnish with 1 tspn sesame oil and 1 tblspn toasted sesame seeds
