Fry up shallots in large pot in sesame oil and fry for about 5 min. Add ginger, lemongrass,
galanga, garlic, scalllion bottoms, jalapeños and fry everything up well.
Add lots of water, a few inches down from top of 11qt pot and bring to boil. Add chopped
carrots halfway between not boil and boil. Bring down to a medium boil. In a little while add
mushrooms chopped in half and cook longer.
Add remaining spices, holding back some lime juice, and bring to desired taste. When
almost done add noodles and fish and cook for 3 min, then turn off burner and let sit for 20
min. Re-taste and add more spices / flavors if necessary, add remaining lime juice if needed.
