1 med head (about 2 lbs) white, savoy, or napa cabbage seperated into leaves
1/2 cup more or less coarse salt
20 scallions, including most of the green, trimmed and roughly chopped
1 tblspn hot red pepper flakes or to taste
1/4 cup soy sauce
1/4 cup minced garlic
1/4 cup sugar
Instructions
layer the cabbage leaves in a colander sprinkling a little salt between layers. let sit over a bowl for at least 2 hours. when the cabbage is wilted, rinse and dry.
mix the scallions, red pepper flakes, soy sauce, garlic, an sugar in a bowl. roughly chop the cabbage and toss with spice mixture. serve immediately or refrigerate for up to a week, it will be come stronger every day
other veggies that work- scallions (use about 50 split in half lengthwise) or 2-3 lbs of daikon, black radish, or turnip, peeled and shredded
