1. Preheat oven to 375
2. Mash the bananas in a large bowln and then add the remaining wet ingredients and whisk until well combined.
3. Add the oatmeal and allow it to sit while you combine the dry ingredients in a medium bowl.
4. Add in 3/4 cup of the walnuts (reserve some to sprinkle on top)
5. Using a large spatula, fold the wet and dry ingredients together just until the dry ingredients are no longer visible.
6. Spray 12 muffin tin with cooking spray and divide the batter equally between them.
7. Sprinkle with the remaining walnuts and bake about 30 minutes or until a toothpick comes out cleanly when inserted in the middle.
8. Allow to cool a few minutes and then let thme finish cooling on a cooking rack.
