In a large saucepan, melt butter and stir in flour. Cook for a minute or two then blend in chicken broth. Add bleu cheese, stirring to melt, and simmer 10 minutes.
Reduce heat and stir in heavy cream, return to a simmer. Just before serving, stir in parsley.
